Today I went to Healthy Nuts and bought two containers of vegan "chicken" salad, each containing (how appropriate!) a different variety: one salsa; the other sundried tomato. I also bought a package of rice crackers (salsa variety). (Are you sensing a TREND, friends?) I brought this bounty home, spooned a *dollop* of each of the salads into a very pretty blue and white bowl, added some of the new crackers, some "old" rice crackers (wasabi variety) I already had in the cabinet, and VOILA! Today I had a couple of scoops (or, really, spoonsful) of SPICY TOFU SALAD (pre-packaged) in a pretty bowl. I added a small sample-size container of leftover green sauce (its technical) from an Indian dinner I had the other night, fresh-ground black pepper, and a few vigorous shakes of classic Tabasco. I transported the mixture to my mouth via onion rice crackers. It was tasty! This is pretty much my "go-to" lunch these days. So it's a good thing I like it!

For lunch today, I went with the #1 Sandwich Shop in the World...Sam LaGrassa's. I had the Cuban Sandwich Special Platter. The Cuban Sandwich is a creation of ham, pork, cheese and pickles that is very popular in Miami. It's quite good. The platter came with fries and cold slaw. Everything was great and I had to roll myself out of there. I went for a walk after eating it or I would have passed out... I ate it over 2 hours ago and I'm still quite full.
