I had my favorite lunch 2 days in a row last week on a trip to boston... tofu spring rolls (3/$3) and vietnamese iced coffee. both days i swam at the chinatown Y and then attempted to walk and eat on the way to revisit more old familiar sites. but it was so darn cold that my springrolls kind of froze and so did my hand, and my nose never stopped running. but still, those spring rolls were so very tasty.

I had a baked sweet potato topped with a cottage cheese salad which included diced grape tomatoes, scallions and garbonzo beans all drizzeled with rasberry vinegar and toasted pumpkin seed oil. There was also a side of steamed veggies (broccoli, cauliflower, baby carrots) drizzled in a butter and carraway seed sauce.

As I might have suspected, tofu isn't for everyone.......Oh well. Today I am having a roll-up pressed sandwich on the George Foreman. Which is actually a great sandwich grill more than anything else. I found lavash bread with flax seed! Inside: roasted eggplant, mesclun, avocado and some hummus to glue it all together. Before that, a nice swim at the Y. Today I had lunch at home. I had my FAMOUS home-made scrambled tofu and roasted (well, actually they were baked and then broiled ... so is that BROASTED?) rosemary-garlic potatoes. I dined alone, which assured me of only the most sparkling of luncheon conversation. While it was certainly tasty, it was not nearly as FUN as my lunch on Friday (the 13th!) with Elaine, who documented our delicious experience two posts down. Friday's lunch was great! I dined with the vegetarian lunch maven herself, the Jodiverse! Both the conversation and lunch were yummy, which included many cups of coffee with soymilk, no sugar for me. My entree: the Tuscan Salad (but they left out the sundried tomatoes. hmm.) Hers, the "meat"loaf with mushroom gravy and mashed potatoes. All in all, a great place b/c everything on the menu is veggie!!
